Chef May’s Story
Replace this introduction with Chef May’s approved biography and family story.
For Chef May, food has never been simply about preparing a meal. It is about bonding and creating new memories.
Kibbi House was born from that connection.
Growing up with the flavors and food traditions of Mesopotamia, May learned that some of the most meaningful moments happen around the table. Food welcomed guests, brought families together, marked celebrations, and carried memories from one generation to another.
Among those foods, kibbi held a special place.
My Kibbi Teachers
I did not learn to make kibbi from a cookbook or from one person. I learned from many remarkable women—my grandmothers, my aunts, my neighbors, and my friends’ mothers.
They were all my kibbi teachers.
Each woman had her own way of doing things. One would show me a particular technique. Another would share a little tip that she had learned through years of experience. They taught me how the mixture should feel in my hands, how to shape it, how to work patiently, and how to recognize when it was just right.
And they didn’t simply tell me how to do it. They invited me to practice.
I loved those opportunities. I learned by watching their hands, listening to their advice, trying it myself, making mistakes, and trying again.
There was no single “kibbi lesson.” My education happened in kitchens, surrounded by women who generously shared what they knew.
Today, I realize how extraordinary that was.
I miss those phenomenal teachers. But every time I make kibbi, something of what they taught me is still there—in the techniques, in the little details, and in the care that goes into making it.
Kibbi House is, in many ways, my way of carrying those lessons forward.
From One Kibbi to Five
At Kibbi House, tradition is not something we simply repeat. It is something we honor, explore, and thoughtfully reimagine.
That idea inspired our collection of Five Signature Kibbis, each with its own distinctive shell, texture, and character.
Bronze: celebrates the familiar crispness of burgul.
Golden Signature: brings a beautifully crisp seasoned rice shell.
Amber: offers the warmth and comfort of a crisp potato shell.
White Pearl: features a delicate, smooth rice flour shell.
Earthstone: brings a hearty wheat-based expression to the collection.
Inside, customers can discover carefully seasoned fillings, including beef and turkey, as well as plant-based combinations made with ingredients such as walnuts, pine nuts, barberries, raisins, lentils, chickpeas, and spinach.
Together, the five varieties tell the Kibbi House story: rooted in tradition, yet open to creativity.
A Table Shaped by Mesopotamian Tradition
Mesopotamian hospitality is generous by nature.
A table is not simply a place to eat. It is where people bond, share stories, welcome visitors, and establish rooted relationships.
That spirit is at the heart of Kibbi House.
Our menu reaches beyond kibbi, drawing inspiration from the flavors and traditions May grew up with and emphasizing fresh, thoughtfully selected ingredients and food meant to be shared.
Some dishes remain close to tradition. Others carry a Kibbi House interpretation.
But they share one purpose: make people feel welcomed to the table.
Made for the Way We Live Today
Traditional foods can require hours of preparation. Modern families don’t always have that time, but that should not mean giving up on quality food.
Kibbi House brings those two worlds together.
Our fresh meals are prepared for convenient pickup and delivery, while our fully cooked frozen kibbis make it possible to keep Kibbi House at home and enjoy them whenever you choose.
Heat them. Serve them. Share them. And enjoy!
More Than a Meal
Kibbi House is ultimately about sharing and possibility.
It is about creating new memories while carrying old ones forward.
It is also an invitation.
You do not have to have grown up eating kibbi to belong at our table.
Because food can introduce us to new culture, provokes memories, brings people together.
And sometimes, a single dish can tell a story.
Welcome to Kibbi House.
Rooted in Mesopotamian tradition. Meant to be shared.
